Say hello to another budget-friendly beef taco traybake – a crowd-pleaser that’s as convenient as it is delicious!
Ingredients
200g dried pasta curls
1 1/2 tbs extra virgin olive oil
1 brown onion
1 red capsicum
330g beef mince
35g sachet taco seasoning
375g mild chunky salsa
400g red kidney beans
200g sour cream
1 cup grated pizza cheese
1/4 cup coriander leaves
1 Lebanese cucumber
Method
Step 1
Cook pasta in a large saucepan of boiling, salted water according to package instructions. Drain.
Step 2
Meanwhile, preheat oven grill to high. Heat 1 tbs oil in a large flameproof baking dish over medium-high heat. Add onion and capsicum, then cook, stirring, for 5 minutes or until softened. Add mince and cook, breaking up any lumps with a wooden spoon, for 5 minutes or until browned.
Step 3
Add seasoning to dish, then cook, stirring, for 1 minute or until well combined. Add pasta, salsa, beans and half the sour cream, then season and cook, stirring, until combined and warmed through. Remove pan from heat. Scatter top with cheese, then place under grill for 5 minutes or until golden.
Step 4
Meanwhile, combine coriander, cucumber and remaining oil in a small bowl. Serve bake, topped with cucumber salsa and remaining sour cream.
