Mexican Sausage & Bean Salad


This warm beef-sausage salad has all the right ingredients for a stress-free midweek dinner: it’s easy to make, filling and full of flavour.


Ingredients

8 thin beef sausages

400g four seasons coleslaw kit

425g can Mexican style 3 bean mix no added salt, drained, rinsed

420g can sweet corn kernels, drained, rinsed

1 large avocado, sliced

2 spring onions, sliced


Method

Step 1

Heat a large non-stick frying pan over medium-high heat. Add sausages and cook, turning occasionally, for 8 minutes or until cooked and browned. Remove from heat. Cool slightly. Slice.

Step 2

Place the coleslaw kit in a large bowl. Add beans, corn, and sausages. Add dressing from the kit. Toss to combine.

Step 3

Spoon salad into serving bowls. Top with avocado. Serve sprinkled with spring onion.
