Quick Louisiana-Style Chicken Skewers


Treat Mom to a special Mother's Day dinner with these saucy, flavour-packed Southern-style chicken skewers—ready in just 20 minutes! Perfect for a stress-free celebration, this easy dish is bursting with bold flavors the whole family will love. Whether served with a fresh salad or warm cornbread, it’s a simple yet heartfelt way to make her day deliciously memorable.


Ingredients

1 1/3 cups Sunrice medium grain white calrose rice

500g Woolworths RSPCA approved chicken breast fillets, cut into 2.5cm pieces

1 tbs vegetable oil

220g Chicken Tonight Louisiana style BBQ chicken skewers cooking sauce

340g Woolworths buffalo style salad kit

1/4 bunch coriander, leaves picked (to serve)

Directions

Step 1

Cook rice according to packet instructions, following the absorption method.

Step 2

Meanwhile, thread chicken onto 8 small metal skewers.

Step 3

Heat oil in a large frying pan over medium-high heat. Cook skewers for 6 minutes, turning occasionally, or until golden and almost cooked through. Add sauce and reduce heat to medium-low. Cook for 2 minutes, turning, or until chicken is cooked through and sauce is hot

Step 4

Meanwhile, prepare salad according to packet instructions. Divide rice and salad among plates. Top with skewers and serve sprinkled with coriander.
