Slow-cooked Beef Stew


This one-pot meal with winter vegetables, chuck steak and macaroni is the perfect dinner to warm and your loved ones up.


Ingredients:

  • 1 tbs extra virgin olive oil

  • 400g chuck beef steak, cut into 3cm cubes, trimmed

  • 2 cloves garlic, crushed

  • 3 sticks celery, finely chopped

  • 1 tbs rosemary, finely chopped

  • 140g no-added-salt tomato paste

  • 800g Woolworths no-added-salt diced Italian tomatoes

  • 250g frozen mixed corn, carrot & peas vegetable mix

  • 4 cups macaroni, cooked

  • 2 tbs coarsely chopped continental parsley leaves

Method:

Step 1

Heat oil in a large saucepan over high heat. Add beef and cook for 2-3 minutes, stirring occasionally, or until browned all over.

Step 2

Reduce heat to medium and add garlic, celery and rosemary and cook, stirring for 1-2 minutes or until tender.

Step 3

Add tomato paste and stir to combine. Transfer to a slow cooker, add tomatoes and 2 cups water and cook on low heat for 6 hours, or until beef is tender. In the last hour of cooking, add vegetable mix.

Step 4

Add cooked pasta to beef mixture and stir to combine. Season with pepper to taste. Serve sprinkled with parsley.
