Baked Burrito Bowl Recipe


A fiesta of Mexican flavours in a bowl, this budget-friendly dish will impress the whole family.


Ingredients

250g chicken thigh fillets, coarsely chopped

35g Woolworths taco seasoning mix

1 brown onion, halved, thinly sliced

2 tbs extra virgin olive oil

3 cups Woolworths basmati rice

400g Woolworths Italian diced tomatoes

420g Macro no-added-salt black beans, rinsed, drained

3/4 cup water

1 avocado, sliced

1/2 cup Woolworths sour cream

1/3 cup drained, sliced jalapeños

Directions

Step 1

Preheat oven to 200°C/180°C fan-forced. Place 4 x 1L (4 cup) rectangular ovenproof baking dishes on a baking tray. Combine chicken, seasoning, onion and oil in a bowl.

Step 2

Divide rice equally among prepared dishes. Top with canned tomato, beans and 3/4 cup water in each dish. Add chicken mixture and stir to combine. Cover tightly with foil. Bake for 45-50 minutes or until rice is tender, chicken is cooked and liquid is absorbed.

Step 3

Serve burrito bowls topped with avocado, sour cream and jalapeños.
